Biscotti mylar bags are heat-sealed, foil-lined pouches that keep twice-baked biscotti dry and crisp for weeks, because the metallized layer blocks moisture, light and oxygen far better than a plain poly bag. We print them in any size with no minimum order, so a bakery can run a single flavor or a whole seasonal line. A standard 4 by 6 inch pouch holds four to six biscotti, and a 5 by 8 inch stand-up pouch holds a dozen.

Why biscotti go into mylar and not cellophane

Biscotti are dried out on purpose. That is what gives them the snap. It also makes them a sponge for humidity, and a cello bag will let a crisp biscotti turn soft in a week on a humid shelf. A 3.5 mil mylar laminate with a foil or metallized center layer has a water vapor transmission rate low enough that the same biscotti stays crisp for six to eight weeks unopened, longer with an oxygen absorber. Oil migration from almonds or chocolate does not stain the outside either, which matters when the bag is the shelf presentation.

Sizing the bag to the biscotti

Measure the longest biscotti in the batch, then add one inch of length for the seal and headspace. Width is the count laid flat side by side plus half an inch. A traditional 6 inch biscotti in a bag of six fits a 4 by 7 inch pouch with room to seal. If you sell by weight rather than count, a 6 by 9 inch stand-up pouch with a 3 inch gusset holds a pound of mixed biscotti and stands upright on a shelf or at a market table.

Window or no window

A clear window sells biscotti because the customer can see the almonds and the dip. The trade is that the window is not foil-lined, so shelf life drops to roughly half.     Six to eight weeks unopened in an opaque foil-lined bag at room temperature. Add a food-grade oxygen absorber and that stretches to three months or more. A windowed bag roughly halves those numbers because the window is not foil-lined.

  2. Do I need special equipment to seal them?

    No. A hand impulse sealer, the kind that costs about as much as a kitchen scale, gives a clean 3 mm seal. For higher volume a tabletop band sealer runs bags continuously.

  3. Can I get a resealable zipper?

    Yes. A press-to-close zipper sits below the tear notch, so the customer opens the top once and resealing keeps the rest crisp. It adds nothing to lead time.

  4. What is the smallest order?

  5. Are the bags food safe?

    Yes. The inner layer that touches the biscotti is a food-contact polyethylene, and the ink sits on the outside of the laminate where it never touches food.
