Cardstock in the range of 14 to 16 pt is a sensible starting point, stiff enough to hold its shape in the wind and thick enough to survive a week on a handle. Thin stock curls, and curled hangers look cheap.
If you plan a tear-off coupon, tell us when you request a quote, since a perforation changes the dieline and the stock you should choose. Do not assume it can be done on any layout until the dieline is checked.
Print both sides if you can. The back of a door hanger is free real estate that most buyers leave blank. A hotel might put room service hours there, a restaurant a map and a menu link, a real estate agent a short list of recent sales. The blank side also tends to be the side that faces the door, so it is read when someone takes the card off the handle.
Finish for the weather
Door hangers sit outside, so the surface matters. A gloss or matte aqueous coating resists light moisture and fingerprints. UV coating gives a shinier, tougher surface, though a heavy gloss can glare in photographs. Soft-touch lamination feels excellent in the hand but marks easily when stacked by delivery staff. For a hotel guest room, soft-touch is a nice gesture. For a flyer campaign in the rain, a coated gloss is the more sensible pick.
